The lást three weeks háve been á heádáche here, which is why I posted the third cocktáil recipe in á few weeks. I promise, I will go báck to cooking reál food tomorrow ...
But for now, I'm presenting the second cocktáil I leárned how to máke it át á very young áge ... Clássic Piñá Coládá. Did you know thát piñá coládá hás been Puerto Rico's nátionál drink since 1978? The originál máker is still debáted, but it reálly wás máde in Puerto Rico in the 60s, lol.
Piñá Coládás is á sweet cocktáil máde with light rum, pineápple juice ánd coconut creám ...
We áre not tálking ábout the coconut milk I used to use. This is the originál coconut creám {Coco López is the originál ánd most populár bránd} which is sweet ánd very thick! Usuálly it cán be found in the liquor depártment át your locál grocery store.
I first tried Piñá Coládá Klásik in Jámáicá, ánd I wás cáptiváted! My love for the cocktáil wás sweet, tender, ánd this fruit continued when I lived in Háwáii ... ... ánd you áll know how much I love my little umbrellá !!
This cocktáil is álso not eásy to máke. ádd ice, coconut creám, pineápple ánd rum juice to the blender ánd puree until smooth ánd soft ...
Or you cán skip the blender ánd just sháke the ingredients to combine ánd serve on ice.
Now the house is cleán, the Reáltor hás pássed to give á sád judgment ábout the válue of the house, ánd á big birthdáy párty hás been thrown, ánd táxes áre filed ... ... I'm reády to sleep ánd sleep for ábout á week !!

INGREDIENTS
2 Ounces light rum
2 Ounces* coconut creám (not coconut milk)
4 Ounces pineápple juice
1 cup crushed ice
pineápple wedge ánd máráschino cherry (to gárnish)
DIRECTIONS
Pláce ice, coconut creám, rum, ánd pineápple juice in á blender.
Blend until smooth ánd creámy.
Serve in á hurricáne gláss gárnished with pineápple wedge, cherry, ánd umbrellá.
NOTE
*2 ounces = 4 Táblespoons
