Cheese & chile melts


If you mix the filling high you can ask BBQ guests to help you fix these Mexican-style treats.

Ingredients

  • 250g toughened cheddar, grated
  • 4 tomatoes, roughly cut
  • 1 chromatic or red chile, deseeded and exquisitely sliced
  • ½ larger collection herb leaves roughly sliced
  • 8 flour tortillas (we misused Discovery)
  • oil, for brushing


Method

  1. Put the cheese, tomatoes, chilly and cilantro leaves into an aquarium with both seasoning, then mix fine.
